Beetroot and Chickpeas

Curried Beetroot and Chickpeas Roast

Beetroot is a magnificent source of antioxidants - amazing for immunity as well as cardiovascular health!

Ingredients:

  1. 1 can of chickpeas, drained and rinsed
  2. 400g spiced cooked beetroot, cut in pieces
  3. 1 large onion, chopped
  4. 5 cm fresh ginger, grated
  5. 3 cloves of garlic crushed
  6. 1 tsp ground ginger
  7. 1 tsp turmeric
  8. 3 tsp korma spices
  9. 1 tin coconut milk
  10. coriander, chopped

Preparation:

  • Put onion, garlic, fresh ginger, chickpeas, beetroot and all spices together in a baking tray. Mix together
  • Add the coconut milk and stir well
  • Put in the oven at 180 degrees for 30 minutes
  • Serve with chopped coriander, naan bread and/or brown rice
