Curried Beetroot and Chickpeas Roast

Beetroot is a magnificent source of antioxidants - amazing for immunity as well as cardiovascular health!
Ingredients:
- 1 can of chickpeas, drained and rinsed
- 400g spiced cooked beetroot, cut in pieces
- 1 large onion, chopped
- 5 cm fresh ginger, grated
- 3 cloves of garlic crushed
- 1 tsp ground ginger
- 1 tsp turmeric
- 3 tsp korma spices
- 1 tin coconut milk
- coriander, chopped
Preparation:
- Put onion, garlic, fresh ginger, chickpeas, beetroot and all spices together in a baking tray. Mix together
- Add the coconut milk and stir well
- Put in the oven at 180 degrees for 30 minutes
- Serve with chopped coriander, naan bread and/or brown rice
