Butternut Squash soup

Difficulty: Easy

Cooking time: 20 minutes


Butternut squash, onion, garlic and chilli are a combination made in heaven. Add freshly grated ginger and coriander for that extra zest!


  1. 1 butternut squash, deseeded, peeled and cut in small pieces
  2. 1 large red onion, chopped
  3. 2-3 cloves of garlic, crushed
  4. 2 chilli peppers, chopped in small pieces
  5. 1.5L vegetable stock
  6. Olive oil
  7. Salt and pepper


  • Fry the onion, garlic and chilli peppers in a tbsp olive oil
  • Add the pieces of butternut squash
  • Add the vegetable stock and cook for 20 minutes
  • Blend until consistency of your liking
  • Season with salt and pepper
