Butternut Squash soup

Cooking time: 20 minutes
Butternut squash, onion, garlic and chilli are a combination made in heaven. Add freshly grated ginger and coriander for that extra zest!
Ingredients:
- 1 butternut squash, deseeded, peeled and cut in small pieces
- 1 large red onion, chopped
- 2-3 cloves of garlic, crushed
- 2 chilli peppers, chopped in small pieces
- 1.5L vegetable stock
- Olive oil
- Salt and pepper
Preparation:
- Fry the onion, garlic and chilli peppers in a tbsp olive oil
- Add the pieces of butternut squash
- Add the vegetable stock and cook for 20 minutes
- Blend until consistency of your liking
- Season with salt and pepper
