Chickpea Roast

Chickpea Roast

Roasted chickpeas mixed with Jamaican Jerk spices are a delicious combination!

Ingredients:

  1. 1 tin of chickpeas, drained and rinsed
  2. 1 red onion chopped
  3. 1 clove garlic, crushed
  4. 2 peppers (any colour), chopped
  5. 4 broccoli stalks (or more, according to taste)
  6. 8 asparagus
  7. 2 heaped teaspoons of Jamaican Jerk
  8. Salt and Pepper

Preparation:

  • Fry the onion, garlic and peppers together in some olive oil
  • Add the chickpeas, salt & pepper and Jamaican Jerk and give it a good stir
  • Put in the oven at 180 degrees for 20 minutes, stir occasionally
  • Add the broccoli and asparagus
  • Bake for 10 more minutes
