Chickpea salad with salsa verde

A delightful lunch full of fibre and anti-oxidants! You have to try this one...

Ingredients Chicpea Salad:

  • 1 tin of chickpeas – rinsed
  • 3 stays of celery – chopped
  • 2 large carrots – grated
  • 1 small onion – chopped
  • juice of 1 lime
  • 1tsp garam masala
  • 1 tsp cumin
  • 2 tbsp olive oil
  • handful of chopped mint
  • 1 red chilli – chopped

Preparation Chickpea Salad:

  1. Put all ingredients together in a bowl and give it a good stir
  2. Season with salt & pepper

Ingredients Salsa Verde:

  • Handful of Parsley – chopped
  • 2 anchovy fillets – chopped
  • 1 tbsp capers
  • 1 crushed clove of garlic
  • 4 tbsp olive oil
  • 1 tbsp lemon juice +zest of lemon
  • 1 tbsp apple cider vinegar
  • 2 tsps Dijon mustard
  • Salt & pepper

Preparation Salsa Verde:

  1. Put all the chopped ingredients in a fast blender and season according to taste
