Chickpea salad with salsa verde

A delightful lunch full of fibre and anti-oxidants! You have to try this one...
Ingredients Chicpea Salad:
- 1 tin of chickpeas – rinsed
- 3 stays of celery – chopped
- 2 large carrots – grated
- 1 small onion – chopped
- juice of 1 lime
- 1tsp garam masala
- 1 tsp cumin
- 2 tbsp olive oil
- handful of chopped mint
- 1 red chilli – chopped
Preparation Chickpea Salad:
- Put all ingredients together in a bowl and give it a good stir
- Season with salt & pepper
Ingredients Salsa Verde:
- Handful of Parsley – chopped
- 2 anchovy fillets – chopped
- 1 tbsp capers
- 1 crushed clove of garlic
- 4 tbsp olive oil
- 1 tbsp lemon juice +zest of lemon
- 1 tbsp apple cider vinegar
- 2 tsps Dijon mustard
- Salt & pepper
Preparation Salsa Verde:
- Put all the chopped ingredients in a fast blender and season according to taste
