Courgetti-Herb Salad

Great for lunch or as a side dish ....
Ingredients:
- 1 large Courgette, spiralised
- 2 spring onions, chopped in small pieces
- 3 tbsps pinenuts, pan-fried
- handful of basil and flat parsley, coarsely chopped
- dressing: 3 tbsps olive oil, 1 tbsp apple cider vinegar, 1 tsp mustard, 1 tsp balsamic syrup
- parmesan shavings
Preparation:
- Add all the ingredients in a bowl, apart from pine nuts and parmesan
- Stir the ingredients of the dressing really well
- Finish off with pine nuts and parmesan
