Fennel and Parmesan Salad with Mint dressing

The fresh mint to this salad makes all the difference!
Ingredients:
- 1 bulb of fennel, sliced
- Slices of parmesan
- Chopped spring onion
- Sliced chilli peppers
dressing: Chopped fresh mint, 2 tbsps olive oil, squirt of lemon juice, salt and pepper
Preparation:
- Put the first 3 ingredients on a plate
- Mix together the ingredients of the mint dressing and add to the above
- Decorate with finely sliced chilli peppers
