Fennel and Parmesan Salad with Mint dressing

The fresh mint to this salad makes all the difference!

Ingredients:

  1. 1 bulb of fennel, sliced
  2. Slices of parmesan
  3. Chopped spring onion
  4. Sliced chilli peppers

dressing: Chopped fresh mint, 2 tbsps olive oil, squirt of lemon juice, salt and pepper

Preparation:

  • Put the first 3 ingredients on a plate
  • Mix together the ingredients of the mint dressing and add to the above
  • Decorate with finely sliced chilli peppers
