Herb salad with avocado dressing

This is a great way to use up those fresh herbs you bought but forgot to use over the last few days...


  1. 1/2 onion thinly sliced
  2. Bunch of chives finely chopped
  3. 1 handful coriander, coarsely chopped
  4. 1 handful of small basil leaves
  5. or any other fresh herbs
  6. 2 tbsps pinenuts
  7. dressing: medium avocado smashed, 50g yoghurt, 1 clove garlic, sea salt, 1 tbsp lemon juice


  • Put all the herbs, onion and pine nuts in a bowls
  • add together all the dressing ingredients and stir well
  • Serve together
