King Prawn and Spinach soup

A very quick soup with an Asian twist...
Ingredients:
- 200g peeled king prawns
- 100g fresh spinach
- 200g button mushrooms, halved
- 1L vegetable stock – 2 cubes in 1L water
- 2cm grated ginger
- 1 red chilly, chopped
- juice of 1 lime
- Salt and pepper
Preparation:
- Make the vegetable stock out of cubes and water
- Add the grated ginger and red chilly
- Bring to the boil
- Add the button mushrooms and king prawns and simmer for 5 minutes
- Add the spinach and simmer for 3 more minutes
- Remove from the heat, add the lime juice, salt and pepper to your taste
