Lentil and Fig Salad

A salad that touches the eye and the palette and soo nourishing!!
Ingredients:
- 100g Green dried lentils, cooked in vegetable stock for 20 minutes and rinsed
- 1 avocado, cut in piece
- 4 spring onions, chopped
- 150 g spiced beetroot, chopped
- 1 bag of rocket salad
- 100g pine nuts, panfried or roasted for 5 minutes (do not burn them)
- 10 cherry tomatoes, quartered
- 6 figs, quartered
- dressing: 3 tbsps olive oil, 1 tbsp apple cider vinegar, 1/2 tsp Dijon mustard, square of balsamic syrup
Preparation:
- Add all the ingredients in a large bowl including the dressing and stir well
- Decorate with the quartered figs
