Lentil and Fig salad

Lentil and Fig Salad

Difficulty: Easy

Preparation time: 25 minutes

Cooking time: 20 minutes

 

A salad that touches the eye and the palette and soo nourishing!!

Ingredients:

  1. 100g Green dried lentils, cooked in vegetable stock for 20 minutes and rinsed
  2. 1 avocado, cut in piece
  3. 4 spring onions, chopped
  4. 150 g spiced beetroot, chopped
  5. 1 bag of rocket salad
  6. 100g pine nuts, panfried or roasted for 5 minutes (do not burn them)
  7. 10 cherry tomatoes, quartered
  8. 6 figs, quartered
  9. dressing: 3 tbsps olive oil, 1 tbsp apple cider vinegar, 1/2 tsp Dijon mustard, square of balsamic syrup

Preparation:

  • Add all the ingredients in a large bowl including the dressing and stir well
  • Decorate with the quartered figs
