Minestrone Soup

A soup full of fibre and anti-oxidants, very advantageous to have them both in our daily diet!

Ingredients:

  • 1 litre of vegetable stock
  • 1 red onion chopped
  • 1 clove of garlic crushed
  • 1 large carrot diced
  • 2 celery sticks chopped
  • 10 small florets of cauliflower
  • 1 red pepper chopped
  • 2 large tomatoes chopped
  • 1 can black beans, rinsed
  • fresh thyme

Instructions:

  1. Fry the onion, garlic, carrot and celery sticks for 10 minutes
  2. Add the vegetable stock, chopped tomatoes and black beans and cook for 10 more minutes
  3. Add the cauliflower and cook for more 10 minutes
  4. Serve with freshly chopped thyme
