Minestrone Soup

A soup full of fibre and anti-oxidants, very advantageous to have them both in our daily diet!
Ingredients:
- 1 litre of vegetable stock
- 1 red onion chopped
- 1 clove of garlic crushed
- 1 large carrot diced
- 2 celery sticks chopped
- 10 small florets of cauliflower
- 1 red pepper chopped
- 2 large tomatoes chopped
- 1 can black beans, rinsed
- fresh thyme
Instructions:
- Fry the onion, garlic, carrot and celery sticks for 10 minutes
- Add the vegetable stock, chopped tomatoes and black beans and cook for 10 more minutes
- Add the cauliflower and cook for more 10 minutes
- Serve with freshly chopped thyme
