A Christmas alternative for Pigs-in-Blankets or perfect canapé all year round


  1. 1 pack of Halloumi
  2. 1 courgette
  3. 1 aubergine
  4. olive oil
  5. salt and pepper


  • Slice the Halloumi in 1cm thick blocks
  • Put some olive oil in a griddle pan and fry them for a few minutes
  • Slice the courgette and aubergine in long thin slices
  • Brush olive oil on them
  • Fry them in the pan
  • Roll the vegetables around the Halloumi
