Not-Pigs-in-Blankets

A Christmas alternative for Pigs-in-Blankets or perfect canapé all year round
Ingredients:
- 1 pack of Halloumi
- 1 courgette
- 1 aubergine
- olive oil
- salt and pepper
Instructions:
- Slice the Halloumi in 1cm thick blocks
- Put some olive oil in a griddle pan and fry them for a few minutes
- Slice the courgette and aubergine in long thin slices
- Brush olive oil on them
- Fry them in the pan
- Roll the vegetables around the Halloumi
