Pickled vegetables

Pickled vegetables

A really healthy snack that will give you a good kick!

Ingredients:

  1. A range of vegetables from carrots, celery, asparagus, pepper, onions, garlic etc
  2. spices like ginger, coriander seeds, peppercorns, dille
  3. half amount of apple cider vinegar
  4. half amount of water
  5. 1 tbsp salt and 1 tbsp sugar
  6. kilner jar(s)

Preparation:

  • Clean out the kilner jar(s)
  • Clean the vegetables, cut them in long sticks
  • Put the kilner jar on its side and stack the cut vegetables in it
  • Once fill, put the jar back straight
  • Boil up the water with apple cider vinegar
  • Add the spices around the stacked vegetables
  • fill up the jar with the boiled mixture
  • close the jar and let it stand for 2-3 days
  • Put in the fridge once cold
