Quinoa and raw cabbage salad

A healthy lunchtime dish, full of essential amino acids! A great dish to eat after exercise...
Ingredients:
- Dry quinoa, cooked in vegetables stock for 20 minutes and rinsed
- 1/2 white cabbage, cut in small pieces
- 1 pack mange-touts, parboiled for 3 minutes
- 1 yellow pepper, cut in small strips
- 2 red sweet chillies
- dressing: 3 tbsps olive oil, 1 tbsp apple cider vinegar, 1 tsp balsamic syrup, 1 tsp dijon mustard
Preparation:
- Dressing: put all the ingredients in a small bowl and stir really well, add some salt and pepper to your own taste
- Put the quinoa and veg in a bowl together and mix with the dressing above
