Roasted Broccoli and Green Bean Salad

Broccoli is one of those cruciferous vegetables that we all should eat every day! Try out this recipe - it's magical!
Ingredients:
- 300 g Tenderstem Broccoli
- 1 tbsp chilli-infused oil
- 200 g Green Beans
- 50 g pine nuts
- dressing: 1 red chopped onion, olive oil, apple cider vinegar, Dijon mustard, balsamic glaze
- Salt and Pepper
Preparation:
- Roast the broccoli for 10-15 minutes with a little bit of chilli-infused oil and cool down
- Parboil the green beans for 5 minutes and cool down
- Fry the pine nuts in a pan (without extra oil) on the hob until browned (Keep an eye on the pan, it burns quickly) and cool down
- Make the dressing: Chop the red onion very finely, add 3 tbsps olive oil, 1 tbsp apple cider vinegar, 1 teaspoon of mustard and a squirt of balsamic glaze
- Put all the ingredients above together
- Add some baby leaf salad to this if you prefer.
