Roasted Red Pepper and Tomato Soup

Cooking time: 20 minutes
Roasting the vegetables gives that added flavour!
- 2 onions
- 3 large tomatoes
- 3 red peppers
- 1000ml veg stock
- olive oil
- salt and pepper
- fresh herbs
- Cut up all the veg, mix with oil and roast for 20 min.
- Add the vegetable stock and bring this to the boil.
- Boil for 20 minutes and blend
