Moroccan chickpea soup recipe

Roasted Red Pepper and Tomato Soup

Difficulty: Easy

Serves: 4

Preparation time: 20 minutes

Cooking time: 20 minutes

 

Roasting the vegetables gives that added flavour!

Ingredients

  • 2 onions
  • 3 large tomatoes
  • 3 red peppers
  • 1000ml veg stock
  • olive oil
  • salt and pepper
  • fresh herbs

Instructions

  1. Cut up all the veg, mix with oil and roast for 20 min.
  2. Add the vegetable stock and bring this to the boil.
  3. Boil for 20 minutes and blend
