Easy recipe, beautiful to serve, delicious to eat!
Ingredients:
- 1 aubergine, cut in 8 long pieces
- 1 courgette, cut in 8 long pieces
- 3 carrots, cut in the same sizes as the above
- 1 yellow pepper, cut in 6 long pieces
- 3 big-sized florets of cauliflower
- 2 red onions, cut in large pieces
- 5 cloves of garlic, uncut
- Olive oil
- Salt and pepper
- Herbs Provencale
- Fresh coriander or parsley
Preparation:
- Put all the cut up ingredients in a baking tray
- Mix with olive oil, salt pepper and herbs provencale
- Bake in the oven for 30 minutes at 180 degrees, stirring occasionally
- Serve warm with fresh coriander or parsley
