Roasted vegetables

Easy recipe, beautiful to serve, delicious to eat!

Ingredients:

  1. 1 aubergine, cut in 8 long pieces
  2. 1 courgette, cut in 8 long pieces
  3. 3 carrots, cut in the same sizes as the above
  4. 1 yellow pepper, cut in 6 long pieces
  5. 3 big-sized florets of cauliflower
  6. 2 red onions, cut in large pieces
  7. 5 cloves of garlic, uncut
  8. Olive oil
  9. Salt and pepper
  10. Herbs Provencale
  11. Fresh coriander or parsley

 

Preparation:

  • Put all the cut up ingredients in a baking tray
  • Mix with olive oil, salt pepper and herbs provencale
  • Bake in the oven for 30 minutes at 180 degrees, stirring occasionally
  • Serve warm with fresh coriander or parsley
